Sake description :
Tenbi's Tokubetsu Junmai, apply's Yamada Nishiki rice, also use Shizuku and Yamada Nishiki rice from Saito as a Kakemai. Saito no Shizuku is Yamaguchi Prefecture's original sake rice, and is a locally produced rice, mainly produced in the mountainous area of Shimonoseki City, where the sake brewery is located.
With a gentle and refreshing aroma, modest sweetness and sourness, and a freshness reminiscent of citrus fruits, we aim to create sake that goes well with meals. Immediately after opening the bottle, you can feel the carbon dioxide gas and have a fresh, juicy taste, and after the third day of opening the bottle, the gas will withdraw and the sweetness and flavour will increase. Tenbi Tokubetsu Junmai pairs well with sashimi, as well as chicken, pork, and fried foods. Hence, if you warm it at 45 to 50 degrees Celsius, the soft flavour will spread out.
天美の定番酒 特別純米 麹米に、山田錦。掛米は、西都の雫・山田錦を使用しています。 西都の雫は、山口県オリジナルの酒米で、酒蔵のある下関市の山間部が主産地となる地元産米です。「穀良都」と西海222号(山田錦を片親にもつ)を交配し作られました。
穏やかで爽やかな香りと、控えめな甘みと酸味、柑橘を思わせるフレッシュさもあり、食事に合う日本酒を目指しています。開栓直後は、炭酸ガスを感じフレッシュジューシーな味わい、開栓から3日目以降は炭酸ガスが抜け、甘さや旨味が増していきます。開栓後の変化も合わせてお楽しみください。お刺身はもちろん、鶏肉や豚肉、揚げ物などにもよく合います。また45〜50℃でぬる燗にするとやわらかな旨味が広がります。
