Saiya Shuzoten was founded in 1902 residing on the eastern side of Akita prefecture. A motto since its founding has been brewing sake with a focus on in-house cultured yeast and rice polishing. With the blessings of the Yurihonjo region's abundant nature, spring water from the Chokai Mountains, which springs abundantly from the premises of the warehouse, takig advnatge of supuriour hard water that contains a lot of minerals which shapes up the Yukinobousha Brand. Additionally Junmai sake and above are made using the three methods of "Free from charcoal filtration, undiluted with water, and free from paddle to grind the rice, a process called yama-oroshi.
