Nakano Shuzo was founded in 1874 and is the only remaining sake brewery in Kitsuki City, Oita prefecture. Its flagship brand "Chie Bijin" was named after the first proprietress, "Chie", to brew more delicious and more loved sake (meaning "Beautiful Chie"). The secret to the deliciousness of its sake is the quality of the water used. Using Rokugou Manzan's natural water pumped from 200m underground results in a mellow mouthfeel, sweetness and umami, and lively acidity. Additionally, Sake rice is fermentation while playing classical pieces by Mozart to nurture the process even further. A tangible cultural property with classical music.
