Otaka is the original brand for Saito Shuzo before Eikun was born. This time, Saito Shuzo's concept is 100% made in Kyoto. The rice is up to 60% polished Kyoto's original invented & grown Iwai rice. Water is Kyoto's famous soft water Shiragikusui which makes this sake taste soft & mellow. Also, the great hawk seen on the label is originally taken from the wall picture at Nijo Castle.
