For the first time, the brewery chanced ambitious brewing with using 40% polished Miyama Nishiki, grown by local contracted farmers with reduced pesticides and chemical fertilisers. Generally seen as difficult to brew, Miyamanishiki is believed to have limited taste due to its difficulty dissolving. However, the brewery took on the challenge, levering their technology/experience to bring out the Umami/characteristics of the rice. Resulting in an elegant and flavourful sake, boasting a delicate citrus scent, and a clean/sharp taste with premium quality acidity that pairs perfectly with meals.

"It has a refreshing acidity, sweetness, and umami, and we especially recommend pairing it with dishes eaten with a squeeze of lemon. Please try pairing it with alcohol instead of lemon. You can also try mimolette cheese, which has a refreshing and refreshing taste. When paired with this dish, you can enjoy a rich harmony of flavors. Recommended dishes: Penne with cream sauce, wild vegetable tempura, mimolette cheese.

"減農薬・減化学肥料の“特別栽培”によって地元の契約農家に育てられた「美山錦」を、40%まで精米して醸造しました。 一般的に硬質米とされている「美山錦」は、米が溶けにくいことから味の幅が出にくいとされています。今回新たなチャレンジを行い、これまで蓄積した技術と経験を活かして、美山錦の特徴を引き出しながら旨味を出すことに注力した結果「綺麗さ」と「味わい深さ」が両立した美酒が完成しました。 柑橘系の上品な穏やかな香りが特徴で、すっきりとしたシャープな味わいと上質な酸味が合わさり食事に寄り添います。"
