This Junmai Daiginjo is made from Bizen Omachi rice polished to 48%. When poured into a glass, it has a charming aroma reminiscent of cherries, which alone raises our expectations. It has a ripe sweetness reminiscent of tropical fruits, but it is also very elegant at the same time. There is almost no acidity or bitterness, and the taste is a concentration of only the best parts of Omachi rice. While the taste is elegant, it has a rich umami flavour and a light aftertaste, which will make you want to raise your sake cup over and over again.
