Shochu description :

This is a uniquely delicious junmai shochu, made by a brewery that produces both sake and shochu. One of the key features is the pure local water of Tsushima, which is close to soft water. It's lightly filtered to remove impurities, but otherwise left unprocessed to preserve its natural purity.

Thus refining sake-like taste, making it a perfect match for seafood and Japanese cuisine. The rice used is broken rice grains, a byproduct of polishing sake rice, which helps minimize waste and ensures that every part of the rice is used as sustainably as possible.
