Sake description :

Kanbara Brewery brewers sake entirely by hand during the cold winter season and before bottling, aging its sake for a long-term at an low temperatures in the brewery

The manufacturing method of "unfiltered bag-drawn raw sake" is as follows:

  1. As the final stage of sake production unfolds, the naturally pressed sake gently flows from the bag (referred to as "bagged sake").
  2. It is not filtered through charcoal or other materials (unfiltered sake)
  3. It is not pasteurized (raw sake)
  4. It is sake that has been finished in its original state without adding water (undiluted sake)

The unpasteurized sake that drips naturally from the sake bag is stored raw for a year.
The Takane Nishiki rice used is the parent of the Gohyakumangoku rice and is locally grown. It has a pleasant reserved aroma and a smooth mouthfeel. The flavor is rich, but has a refreshing acidity that makes it a crisp dry finished sake.
