This exceptional Pinot Gris showcases the diversity of this grape, which thrives in regions worldwide, from Italy to New Zealand, California, and beyond. Grown in Yoichi, Hokkaido, Japan, these Pinot Gris grapes are sourced from an outstanding local grower, offering a unique interpretation of this beloved white wine.

Year 2021
The 2021 growing season in Hokkaido was unusual, marked by an extended heatwave from July to September, with temperatures soaring above 35°C and minimal rainfall. Near-drought conditions persisted, leading to high sugar levels and elevated alcohol content in the grapes. The result is a vintage characterized by ripe, bold flavors and lower acidity.

Fermenation 
Pressed as whole clusters, the Pinot Gris juice was settled for 12 hours before being transferred to stainless steel barrels and large French oak demi-muids. Fermented with wild yeasts at a cool 17°C, it aged on lees for 8 months, undergoing spontaneous malolactic fermentation. Bottled unfiltered, this wine is a pure expression of its natural process.

Experience a rich white wine infused with aromas and flavors of figs, melon, and a hint of smokiness. Its opulent taste fills the palate with ripe notes and a long, generous finish. This wine is wonderfully deep and soft, requiring minimal aging, best enjoyed after two years. Chill before serving to fully appreciate its bold character and richness.

A full-bodied white wine with notes of fig, melon, and a hint of smoke. Its rich, ripe flavors lead to a smooth, long finish. Best enjoyed chilled within two years to capture its depth and elegance.

Aging Potential
From 2024 to 2027, Expect a rich, fruity profile. From 2027 onward, Anticipate increasing complexity.

Pinot Gris（ピノ･グリ）のGrisとはフランス語で灰色のこと。 北海道余市の中川農園と木村農園で育った人気品種ピノ･グリからつくりました。2021年は、北海道の葡萄栽培農家にとって非常に非典型的な年でした。異常な暑さが7月初旬から9月まで続き、気温が35℃以上に達したこともありました。猛暑の中、雨もほとんど降らなかったため、生育期の後半は干ばつに近い状態が続きました。高糖分とそれに伴う高アルコールがこのヴィンテージの特徴です。
