This sparkling wine is made from a blend of 30 varieties of grapes, including Pinot Noir and Pinot Blanc from Tanba, Kyoto, without the use of any antioxidants. The carbon dioxide produced during fermentation is sealed in, and the yeast is bottled together with the wine without filtration. You can enjoy the complex flavor of the grapes and the nuances of the yeast.
Slightly deep pinkish yellow. Slightly cloudy appearance due to unfiltered. Weak viscosity.
The volume is a little strong. From the top, you can smell the fruity aromas of fresh yellow apple, pear, lemon, lime, quince, and white peach. You can also smell cotton candy.
The finish is sharp, and the bitterness that spreads from the middle to the aftertaste is a nice accent to this dry wine. The fine bubbles spread throughout the mouth, making it a pleasant wine. It goes well with simply cooked white meat and grilled salted seafood.
It goes well with all kinds of seafood, such as white fish sashimi like sea bream or flounder, seafood ajillo, and tempura.

Although the amount of precipitation was slightly higher than in 2022, there was little long rain and the sunshine hours were excellent. The extremely hot weather continued especially in August, which had some impact on grape growth, but the harvest season was normal, and the yield and quality were stable.
