Wine description :

Crafted primarily from Zweigelt grapes cultivated by Mr. Fujisawa and young viticulturists in Yoichi, Hokkaido, this wine showcases the unique terroir of Japan's northern vineyards. Fermentation was done with wild yeast at Coco Farm Winery (79%) and 10R Winery (21%), then carefully aged in wooden barrels at Coco Farm.

Originally introduced to Hokkaido from Vienna in the 1970s, Zweigelt has since become the region's signature red. Kaze no Rouge captures the cool-climate essence of Hokkaido with youthful fruitiness, fresh acidity, and a touch of astringency—an elegant expression of Zweigelt's journey in Japan.

Fermenation 

Grapes from Fujisawa Farm, Arahata, Saigawa, and Funakubo vineyards are meticulously hand-selected for ripeness, with only the best clusters destemmed. They undergo a slow fermentation in stainless steel tanks, gradually activating natural yeasts at low temperatures. For about 2–3 weeks, gentle remontage techniques control tannin extraction, ensuring a balanced profile. Once optimal extraction is achieved, the wine is pressed and transferred to oak barrels to undergo natural malolactic fermentation. It then ages for 12–13 months in oak.

Aging
Grapes from Konishi and Nakagawa vineyards are vinified and fermented at the 10R Winery in Iwamizawa, Hokkaido, then pressed. By the following summer, they are aged an additional four months in oak barrels in Ashikaga.

Tasting Notes
A deep garnet hue, this wine opens with aromas of blueberry and dark cherry, accented by hints of tomato, black pepper, leather, and forest floor. On the palate, fresh fruit and lively acidity give way to a lingering finish of soft, spicy tannins.

Aging Potential
From 2024 to 2027, enjoy fresh, vibrant fruit flavors. From 2028 onward, expect a harmonious maturity with refined depth and elegance.

「風のルージュ」はツヴァイゲルト種主体の赤ワインです。「2021風のルージュ」は北海道余市の藤澤農 園や若い葡萄栽培農家の畑で育ったツヴァイゲルト種を中心にピノ・ノワール種などから構成されて います。醸造場ではこの葡萄の良さを生かすため、野生酵母で醗酵させ慎重に樽で熟成させました。 ちなみに2008年北海道洞爺湖サミットで採用された「2006風のルージュ」について外務省ホームペ ージには次のように記されています。「1970年代、ウイーン郊外の修道院から北海道にツヴァイゲルト の苗がもたらされたが、その苗が徐々に広がって今ではこの品種のワインが北海道を代表する赤ワイ ンとなりつつある。冷涼な気候を反映した若々しく豊かな果実味とフレッシュな酸と程よい渋味・・・」 北海道に育ったツヴァイゲルト種のワインの魅力をお伝えできれば幸いです。
