While being full-bodied, the refreshing acidity balances out the flavour and does not leave a lingering taste. Although it's actually junmai, it has an impressive polishing ratio of 45%! (It is Junmai Daiginjo in terms of specifications and that is why it is named so).
It is recommended to be served lightly chilled, and even though it has a sake meter value of +12, it is very soft on the palate and not too sharp. A sake to be enjoyed in a relaxed manner, with an elegant rice flavour that melts in the mouth. As there are no aromas that interfere with the meal, it is a perfect mid-meal sake.
