Sake description :
This fresh, slightly cloudy new sake flows directly from the cold brewery's pressing mouth and is bottled raw. Its distinct sweetness and freshness make it truly special.
Tasting Notes
The sake has a delicate hazy appearance with a light, silverish hue. It offers vibrant fruity notes of green apple, sweet citrus, and muscat grape, complemented by a subtle pine needle aroma. Floral notes of white plum, gardenia, and rose petals add to the freshness. The complexity deepens with creamy undertones reminiscent of cappuccino foam, hotcakes, baking powder, tofu skin, and cashew nuts. On the palate, a rich sweetness hits initially, with the mid-palate tightening gently, balancing the mouthfeel. A pleasing viscosity combines with smooth, light components, creating a well-rounded balance of flavors that enhances the contrasting tastes. The finish leaves a lingering sweetness, with the fresh aroma returning once more.
Food Pairing Suggestions
The delicate sweetness pairs wonderfully with the slight bitterness of dishes such as tofu dishes, hot pots with white leeks, or ankimo (monkfish liver). For cheese, try it with Mont d'Or. It also complements Chinese-style creamy dishes like braised bok choy and scampi.
