This unique Cherry Blossom Sakura Yeast Sake is a project of brewery Honda Shoten and Himeji Dokkyo University. They collected wild Sakura flower from Himeji Castle and found only 1 sake yeast from 242 wild yeasts in flower. Honda Shoten follows the exact same method and ingredients to make Tatsuriki Tokubetsu Junmai except the yeast (Sakura yeast). As a result, a brand new taste of Sakura Sake is born: aromatic as Sakura, sweet & high acidity towards the end. It comes in a quite charming pink glass bottle which reminds you the walls of Himeji castle. Best enjoyed chilled.
