Established in 1725, Kasumi Tsuru stands as one of Japan's most exclusive breweries, dedicated solely to the traditional Kimoto and Yamahai methods. Under the guidance of Master Brewer Matsumoto, the brewery embraces these meticulous and time-consuming techniques, meticulously crafting sake by hand.

By eschewing modern shortcuts, such as the artificial introduction of lactic acid, Kasumi Tsuru ensures that each batch undergoes a natural fermentation process, resulting in unparalleled depth and rich umami flavors. This commitment to tradition yields a complexity that surpasses modern methods, resulting in a distinguished line of premium sake.

Kasumi Tsuru takes great pride in its role as a local institution within the Tajima region. Guided by the ethos of "Tajima no Hokori tare" (Do Tajima proud), the brewery prioritizes quality, community, and cordiality above all else.

Kasumitsuru Yamahai Junmai

Kasumitsuru's commitment to quality shines through in its sake offerings, which are carefully crafted. One notable option is their Junmai sake, celebrated for its enjoyable acidity and refreshing dry flavor. Through the Yamahai-jikomi process, the sake undergoes a slow fermentation that gives it a distinct acidity and flavor, highlighting the natural microorganisms and lactic acid bacteria. Made solely with Hyogo Kitanishiki sake rice from Tajima, every sip captures the essence of the region's terroir.

Five employees are growing "Hyogo Kitanishiki" in brewery's own cultivated fields.
