"Akiagari" refers to a Sake that is pasteurised for the second time after summer ageing and distributed in the autumn. The roughness of freshly brewed sake disappears, and the taste becomes calm and rounded. From this year, the quality of sake has changed to "Junmai sake". It is a sake that allows you to fully enjoy the umami of aging. The recommended way to drink it is "normal temperature" or "nurume no kan" to further increase the umami. Of course, it's delicious even if it's chilled.
