Brewed in Wakayama with the ambition to surpass the beloved local sake Chōkyū, the Chōkyū series showcases unfiltered, undiluted sake of remarkable depth. Each expression, at 19% ABV, is matured in a -5°C ice cellar, allowing the rice’s rich umami to develop while preserving a fresh, vibrant character.
On the nose, this unfiltered, undiluted Junmai presents a medium-plus intensity with remarkable precision and purity. The aroma opens with steamed rice and toasted rice bran, layered with delicate hints of almond skin and a gentle lactic nuance reminiscent of fresh cream and yoghurt. Subtle green apple, crisp pear skin, and a whisper of melon rind lend a refreshing brightness, balanced by savoury undertones of light miso and white soy. The ice-cellar maturation at -5°C has softened the edges, introducing faint notes of toasted grain and a trace of caramel, while preserving a clean, vibrant freshness throughout.
