Wine description :
Nōmin Dry is a refined white wine from Japan, crafted from grapes grown in the cool climates of northern regions and high-altitude vineyards. The crisp acidity stabilizes the wine and preserves its freshness.
The 2023 Nōmin Dry features a blend of distinctive varietals, including Müller-Thurgau, Kerner, Bacchus, and Silvaner from Hokkaido, along with Sauvignon Blanc from Nagano, all cultivated by skilled local growers. Notably, it includes Müller-Thurgau and Bacchus from the vineyard Liberdade at Coco Farm Winery.
In the winery, a minimalist approach is taken: grapes are lightly pressed to separate the juice from skins and seeds, which are then co-fermented in stainless steel tanks using wild yeast and lactic acid bacteria. After blending, the wine is aged in tanks and lightly filtered before bottling.
The result is a fresh, clean, and pure dry white wine with a graceful palate, perfectly paired with fresh oysters, sushi, and a variety of traditional Japanese dishes.
Fermenation
Gently pressed and de-stemmed grapes yield a delicate juice, which is chilled overnight. The following day, the juice is transferred to stainless steel tanks for fermentation, maintaining a temperature below 22°C to preserve its aromatic qualities. Fermentation with wild yeast lasts about one month, followed by malolactic fermentation using native lactic acid bacteria.
Aging
Aged in stainless steel tanks for approximately 4 to 5 months, followed by racking, blending

Tasting Notes
Delicate lime-green hue, with aromas of grapefruit and pear, complemented by hints of cassis bud and a refreshing ginjo fragrance. Its crisp, dry taste is marked by gentle acidity and fruitiness, while the finish offers an intriguing balance of herbal notes and citrus zest.
