Wine description :

Our signature red wine, "Rosso," is a smooth, fruity dry red, perfect for any occasion. Made from a blend of Merlot and Cabernet Sauvignon grapes from Nagano and Yamagata, this balanced wine offers vibrant aromas and a soft, easy-drinking profile. Ideal with roast chicken, grilled pork, or even a classic hamburger.

Fermenation 
Carefully selected ripe grapes are gently crushed after removing only the best clusters. The grapes are placed in stainless steel tanks where fermentation is gradually encouraged at a low temperature. Through gentle remontage (mixing), the must is slowly warmed. After 2 to 3 days, natural fermentation with wild yeast begins. Fermentation continues for 1 to 2 weeks, during which the alcohol extracts the essential elements from the skins and seeds. Once the desired extraction is achieved, the wine is pressed and transferred to barrels or stainless steel tanks, where malolactic fermentation (MLF) with wild lactic acid bacteria is encouraged. This version is simplified, shortened, and refined for a fine dining tone.

Aging
Aged for approximately 6-7 months in wooden barrels and stainless steel tanks. After racking, it was left unfiltered and unfined.

Tasting Notes
Aromas of raspberry, blueberry, and black cherry, layered with hints of licorice and cocoa from barrel aging. Soft on the palate with rich, sweet fruit flavors balanced by gentle acidity. Smooth tannins linger through the finish, offering a light yet well-structured and harmonious taste.

Aging Potential
From 2024 to 2028, expect fresh, vibrant fruit flavors. Starting in 2029, with aging, the tannins will soften, evolving into a complex and rich taste.
