Wine description :
A delicate dry white wine crafted primarily from Chardonnay grapes, “Kaze no Etude” offers a harmonious blend of flavors. Ripe grapes from select vineyards are harvested and pressed, with the juice fermented in stainless steel tanks or barrels using wild yeasts. This vintage includes 10% Petit Manseng for added structure and is bottled unfined and unfiltered. With a rich mouthfeel and a complex array of fruit and earthy notes, this wine pairs beautifully with shellfish, fish or chicken in cream sauce, pork, and veal. Enjoy the symphony of flavors that reflects the artistry of winemaking.
The 2012, 2013, and 2015 vintages have been featured in first-class international flights and lounges. Enjoy it as an aperitif or chilled for a relaxing moment.
Fermenation
Gently pressed whole grapes yield a pure juice, which is then transferred to stainless steel tanks. The juice is allowed to settle for clarity at around 20°C for one week, before moving to barrels and stainless steel tanks for an additional 1 to 3 weeks of fermentation with wild yeast. Following this, malolactic fermentation with wild lactic acid bacteria enhances the complexity of the wine.
Aging
Aged for approximately six months, 80% in oak barrels and 20% in stainless steel tanks, followed by racking and blending.

Tasting Notes
Aromas of apple, pear, and white peach intertwine with hints of honey, yogurt, mint, and flint. The palate is smooth, offering a delightful balance of pleasant acidity and fruity sweetness, complemented by a subtle bitterness and umami that gradually unfolds in the mouth.
Aging Potential
From 2023-2027, Expect vibrant, fresh fruit flavors to dominate.
2028 onward, As it ages, the wine will gain complexity, showcasing rich aromas and a toasted depth.
