Wine description :

Crafted primarily from Japan's native grape variety, Koshu, Ashicoco has been produced with passion each year since 1984.

The 2022 Ashicoco features specially selected Koshu grapes, gently pressed in the autumn of 2022. After sedimentation, the clear juice is fermented with wild yeast, carefully crafted at low temperatures to preserve its fresh fruit character. A blend of Chardonnay and Bacchus grapes enhances the wine's balance.

With its vibrant fruit aromas and a soft, rich mouthfeel, this wine is perfect for both newcomers and connoisseurs alike. It pairs beautifully with traditional Japanese dishes that use fermented seasonings like soy sauce, miso, and mirin, as well as a variety of cuisines.

The 2012, 2013, and 2015 vintages have been featured in first-class international flights and lounges. Enjoy it as an aperitif or chilled for a relaxing moment.

Fermenation 
Gently pressed destemmed grapes are placed in a tank, allowing the sediment to settle. The clear juice is kept below 20°C and ferments with wild yeast for about a month. To achieve a perfect balance of sweetness and acidity, the tank is cooled to halt fermentation. Some tanks feature blended varieties.

Aging
Aged for approximately four months in stainless steel tanks, followed by racking, blending, and filtration.
