Abunotsuru Brewery, founded in 1897 and located in northeastern Yamaguchi Prefecture on the Japan Sea coast, is well-known for being revived by Ryūtaro Miyoshi, the sixth-generation owner, after a 34-year hiatus. Since its revival, the brewery has won several domestic and international awards, and recently launched a new initiative.

Starting in 2020, Abunotsuru introduced a unique brewing method called Aizaki Jozou. This technique involves blending and refining the sake produced each year to create a flavor and aroma that reflects the essence of that year. Although this method has historical roots in traditional sake brewing, presenting it as a yearly limited edition over five years is a first in the industry.

The concept behind Aizaki Jozou is deeply emotional, driven by a desire to create an experience based on personal sentiment rather than market trends. The first release has already gained attention in gourmet magazines and from public figures.

"‘MIYOSHI HANA’ is a series that expresses a richer world of sake by combining unblended sake brewed every other year over a five-year period from 2020 to 2025. Each year, the sake crafted that year is carefully blended, incorporating a new brewing method called ‘Aisaki Jōzō,’ which harmonizes the flavour and aroma to reflect that year’s character. ‘MIYOSHI HANA 20-23’ is the third edition in the series, a blend of sake from 2020 and 2023. It exclusively uses 100% contract-cultivated Yamada Nishiki rice from Abu, Yamaguchi Prefecture. The result is a sake with a rich, fruity umami and gentle sweetness. The label, featuring a flower bud (camellia) gradually opening, reflects the evolving flavor, inviting you to enjoy its changes."
