About Eikun Brewery

Eikun Brewery, founded in 1881 by Shosaku Mochizuki, is renowned for its soft and elegant sake, crafted using the pristine local water. Adhering to the principle of "quality first," Mochizuki sourced premium sake rice from across Japan. Today, Eikun continues this tradition, incorporating modern technology to enhance efficiency and consistency while preserving traditional methods for steaming rice, and making shubo and koji, which are essential for high-quality sake. Eikun has also partnered with notable figures in the sake world, such as Marïe Chiba, and features unique pop art labels.

Eikun Junmai Ginjo Daidai

The Daidai (Orange) label uses the exceptionally soft water of Shizuoka, derived from Mt. Fuji's snowmelt and virtually mineral-free. This sake is made from the esteemed Bizen Omachi rice of Okayama and fermented with Shizuoka yeast CA50, which thrives even in a low-mineral environment. The result is a sake with bright aromas, reflecting the orange label, and a palate that is juicy and refreshing. It is single-pasteurized and best kept cold.

Serving Suggestions

Serve chilled or cool in a white wine glass. Eikun Junmai Ginjo Daidai pairs excellently with raw dishes like crudo and can enhance the flavors of heavier white fish or pork dishes.
