What Is Nabe and Warmed Sake Day?

Nabe (Hot Pot) and Warmed Sake Day was established by the 'Nihonshu ga Umai! Promotion Committee, formed by leading Japanese sake brewing companies, including Gekkeikan, Kizakura, etc. The date falls on Ritto (7 November), which is a solar term signifying the beginning of winter, a season prefect for enjoying this combination. Nabe is a classic winter food in Japan, and the combination of nabe and warmed sake is at the heart of family gatherings.

Why Nabe and Warmed Sake?

Sake contains particularly high levels of amino acids compared to other alcoholic beverages, due to the complex fermentation process it undergoes. Nabe, on the other hand, contains high levels of the flavour components glutamic acid, inosinic acid and guanylic acid, not only in the ingredients, but also in the kelp and dried bonito flakes used for the broth. Nabe dishes, in which various types of ingredients are simmered in dashi broth, are said to be a treasure trove of umami. Warming up sake further increases its aroma and umami, while the taste becomes more mellow so it will go well with any kind of nabe dish.
