Sudachichu: Shochu That Represents Tokushima Prefecture!

 Sudachi – Symbol of Tokushima Prefecture

Cultivated for centuries in parts of Japan, and perhaps nearly as well known as the yuzu, sudachi is used as garnish with many traditional Japanese dishes which include fish, soba, udon, nabe, and even some alcoholic beverages.

Sudachi is a fragrant citrus fruit that is representative of Tokushima Prefecture, which has a 90% share of the national market for sudachi, and is the top producer in Japan.  The reason for this is that Tokushima has some of the best sunshine hours in Japan and a mild climate all year round, which is ideal for sudachi cultivation. It is only through the manual labor of the farmers in the heat of the summer that the fresh, sour, and fragrant sudachi is produced.

Try Sudachichu

Sudachi Chu was first produced in 1985, and has been a long seller for 36 years. In 1989, it won the first Minister of Agriculture, Forestry and Fisheries Award.

Sudachi is harvested in season from late August to late September, and 100% of the fragrant natural sudachi juice is used to make Sudachi-chu. It has the refreshing aroma of sudachi (citrus fruit), a crisp sourness, and a slight bitterness. The refreshing aftertaste and goes well with meals. It is a shochu-type liqueur that is popular not only in Tokushima but also throughout Japan.

Sudachi Chu can be enjoyed in many ways. Try it on the rocks, or add 90 ml of Sudachi chu and 120 to 150 ml of soda to make a Sudachi Highball. You can also make great cocktails such as this one below!

27th July Is Scotch Whiskey Day

July 27 is celebrated as a Scotch Whisky Day in the world. The date marks the anniversary of that fateful day in 1494 when Scotland’s whiskies were first taxed. Make a toast on National Scotch Day and share a drink with a friend!

Not all whiskey made in Scotland is Scotch. In order to be called Scotch, it has to meet strict regulations, such as the need to use oak barrels for maturation and storage. It must be fermented from malted barley, aged in oak barrels for at least three years and have an ABV or alcohol content of less than 94.8%. While most scotch is made with barley, water and yeast; other grains can be included.  The law does not allow any fermentation additives.

Celebrate with Umesky

Umesky is a unique blend of whisky and ume fruits. Every July unripe ume is steeped in the whisky made in the distillery, slowly drawing out the sweetness and sourness of ume. Ume is harvested in Toyama Prefecture and it is steeped for around a year in the whisky. The result is hard to describe but the delicate aroma of ume and the smooth whiskey are the characteristics of Umesky. At the first sip, you will feel the acidity of ume (which is a little bit stronger that regular umeshu), and then the smooth taste of whisky will follow soon after.

There are many ways to drink Umesky. The best way is to enjoy it straight or on rocks, but you can also try diluting with water or soda water, or even hot water. We recommend enjoying Umesky on its own first, but if you want to try paring it with foods, choose something that is not too overpowering in flavor.

However it’s still chilly in early morning and night.  We recommend warmed sake for cold night to make you warm and it might surprise you as the flavor of sake will change. Warming enhances the aroma, sweetness, sourness, and bitterness of sake.
