Ohmine Shuzou operations were resumed in 2010 after a hiatus of 50 years in Mine City, Yamaguchi, which preserves much of its ancient natural beauty: the Akiyoshi Plateau, a national park formed over the course of 300 million years; and Shuhodo, the most impressive limestone cave in Asia. Ohmine Shuzou is a pioneer sake brewery which aims to take advantage of the abundant natural blessings of Mine City through novel ideas.

The modern & styish bottle’s design is a motif of rice.  This new type of sake brand “Ohmine” was born mixture of tradition & innovation.

Seikyo Junmai Ginjo Omachi Namazake

This is the unfiltered namazake 生酒 (un-pasteurised sake) of our familiar sake “Seikyo 誠鏡 Junmai Ginjo Omachi“, from Nakao Sake Brewery, Hiroshima Japan.

 

Made from 100% Omachi 雄町 premium rice. Omachi rice, discovered more than 150 years ago, is the oldest sake rice variety. Its many fans love the deep umami achieved through brewing.

Using Omachi rice polished to 55%, utmost care and time is given to the koji making process – the step that has the greatest impact on flavor in this carefully brewed unfiltered, un-pasteurised sake. Amazingly rich and fruity flavour!

Rihaku Tokubetsu Junmai Yamatano Orochi Namazake

Namazake (un-pasteurised sake) from Rihaku Shuzo, Shimane Japan. Shimane prefecture is considered to be the birthplace of sake, because it has a rich tradition connected to sake which goes all the way back to the Japanese myths. Yamatano Orochi is a serpent-dragon with eight heads and eight tails in a Japanese myth.

This spicy and solid sake was created with an inspiration of the strength of Yamatano Orochi in a decent traditional method. It is dry, clear with umami, and smooth texture. Great to have it chilled.

Goshin Junmai Ginjo Namagenshu

Junmai Ginjo Namagenshu from Gojo Shuzo, Nara.  Gojo Shuzo was established in 1924 in Gojo City. Since the company’s foundation, its sake has been marketed under the “Goshin 五神” brand.

The name Go-shin was coined from the go in the name of Gojo City and the character shin meaning “god”, reflecting the ancient legacy of making offerings of sake to the gods at weddings, funerals and other ceremonial occasions.

Asabiraki is one of most award-winning sake brewery in Japan. They have given a great care to this sake that has been in a refrigerated tank without heating to preserve the rich taste.

Junmai (Junmai-shu): sake made only from rice and rice koji (without addition of brewers alcohol)

Namagenshu: Heat treatment has not been performed. Highly alcohole % without water adjustment.

Yosoro 酔候: The product name is derived from a ship command which means to go straight ahead.
