WHAT is Nigori Sake?

Nigori Sake is unfiltered sake and often called cloudy sake in English.

Once the fermentation is finished, sake is pressed and divided into clear sake and the white less. Using the rougher filter to let the little less go with clean sake is a way to make it cloudy.

Nigori Sake is often translated as ‘unfiltered’ Sake in English, actually it is roughly filtered. So, technically It is NOT ‘unfiltered’ Sake, but it is rather roughly filtered Sake.

Kizakura Junmai Daiginjo S – Spectacular Sake to Enjoy on Special Occasions!

The Unique Water of Fushimi

Although written with different characters now, the name Fushimi originally comes from characters fusu + mizu, meaning “hidden water”. In other words, the location was known for good spring water. The water of Fushimi has particularly soft characteristics, making the sake mash fermentation speed slower, which results in soft and sweet sake. This also explains why the area developed as a sake-brewing center in Kyoto. Today, Fushimi is the second greatest area of Japan in terms of sake production.

On the small surface of 2 square kilometers around here, there are 25 sake breweries (there used to be 41 breweries 40 years ago), and Fushimi sake district has become a prominent sake region valued by many sake enthusiasts.

Kizakura Junmai Daiginjo S

Fushimi based Kizakura Brewery is one of Japan’s top sake producers. The brand even became synonymous with sake in Japan in the 1980s thanks to a series of TV commercials featuring the mythical creature Kappa, which is also the brewery’s mascot.

In order to make the superb Junmai Daiginjo, Kizakura combined two elements, essential for making premium sake –  Yamada Nishiki, which is the most premium and high-quality sake rice, and Fushimizu water, that is the perfect quality and composition for making sake. Combining these two elements together with 100 years of craftsmanship and strict standards of the brewery master, Kizakura Junmai Daiginjo S was born. S stands for “Spectacular”, and we think this word describes this sake perfectly!

Kizakura Junmai Daiginjo S has uplifting aroma of fresh fruits such as honeydew, strawberry, and white peach, then comes a gentle silky strike on front palate, with a dry finish.

This sake goes very well with sashimi and light tasting meals and is best served chilled or room temperature. With a rice polishing ratio of 50%, it is one of the very few decent yet affordable Junmai Daiginjo sake available on the market.
